Sarah's Sweet and Spicy Meatloaf recipe

Preheat oven to 350 F
Combine in a large bowl:
12 oz. ground beef
12 oz. ground pork
1 ½ C. finely chopped onions
1 C. breadcrumbs
2/3 C. ketchup
½ C. raisins
1 C. of a jar of Potbelly’s hot peppers or any good quality Italian Giardiniera
3 lrg. Eggs
1 t ground thyme (or 2T. fresh thyme)
1 t. salt
½ t. ground pepper
Knead the mixture with your hands until everything is well blended.
Fill a 9 X 5 loaf pan with the meat mixture, mounding the top.
Place the pan on a baking sheet and bake until the meat is firm to the touch and has shrunk from the sides of the pan or until an instant read thermometer inserted in the center of the loaf reads 160 F. About 1 hour.
Let stand for 15 minutes to serve hot, or let cool completely and slice thinly for sandwiches.
For sandwiches:
Serve with mayonnaise (recipe below), sliced tomato, and lettuce.
1 C. mayonnaise mixed with ½ t. smoked paprika and 2T. chopped, mixed fresh herbs.
